Mon, October 9, 2006 - 3:45 PMLet us not forget about Colcannon, that yummy and delicious cabbage and potato dish traditionally served on Samhain. I like to fold in about 1 lb of chopped fried ham (pork or turkey) and a bunch of chopped flat leaf parsley at the end. Also, using evaporated milk, even the lower fat version, gives this recipe a bit more richness than milk. I wouldn't suggest using anything less than 2% milk, though, because you really need the fat.
